In the spirit of National Day, I wanted to bake something red and white, to reflect the colours on Singapore's state flag but the colour didn't stay :-( It does still resemble to something that does have a certain link to the country though - our national flower! I hereby call these cheesecake bites the Vanda Miss Joaquim bites as the pretty purple pink colour looks a lot like our beautiful national flower. Here I bring to you the recipe for
BLUEBERRY CHEESECAKE BITES
(vanda miss joaquim style)
Ingredients:
1. 30g melted butter
2. Cookie crumbs (I used around 6 cookies) - smash any type of cookies/ biscuits you have on hand!
3. 200g cream cheese
4. 70g white sugar
5. 1 egg
6. 1/2 teaspoon vanilla extract
7. Red food colouring (optional)
8. Fruit jam of your choice
1. Preheat your oven to 175 degree Celsius
2. Line your muffin/ cupcake tin with paper liners
3. Mix your cookie crumbs and melted butter well
4. Press the cookie crumb mixture to the bottom of every cupcake liner
5. Bake for 8 min
6. While your crust is baking, prepare your cream cheese mixture!
7. Beat your cream cheese and white sugar together
8. Add your egg and vanilla extract and mix well
9. Split your cream cheese mixture into two and add one tablespoon of your jam and a dash of red food colouring into one of the portions
10. Spoon your white mixture into your baked crusts
12. Bake for 20 minutes :-)
And there you have it! :-) Vanda Miss Joaquim blueberry cheesecake bites :-) (They are blueberry just because of the jam I chose - feel free to use any type of jam - pineapple/ strawberry - the strawberry ones will probably end up a lot more National Day looking than mind did!)
They don't look the most aesthetically pleasing (which is why I removed my Instagram post of it shortly after I posted it up) but they do taste pretty good, especially since I baked these in a rush when I suddenly wanted to bake something National Day themed! They're great for people with a sweet tooth :-)
