It was Home Based Learning today and unlike last year, I woke up in time to actually follow through the actual day's timetable from the comfort of my home, having the liberty of using social media websites and eat during lesson time. Philosophy lesson was probably the most interesting, and having an online COI discussion was actually quite fun. At the end of the lesson, Mr Lorenzo popped up on the Piratepad and told us that the bell has rung in school and lesson was over! Also, that he was actually following through our discussion. It was so cute and funny :-)
At 2pm, I promptly dismissed myself from school and decided to make some potato salad, inspired from the dish Beatrice's sister whipped up during Beatrice's birthday party two weeks ago!

I don't usually like potatoes in general (yes I don't really like fries very much, though potato chips are an exception) but the salad was really really good, with egg and bacon bits and green capsicum and I've been wanting to recreate it for the longest time, so I did today and it went down pretty well (my family really enjoyed it and my mum wanted me to make it for family gatherings in future). I don't usually cook savoury food and I did this purely from what the memory of what I tasted that day HAHA. I still think Beatrice's sister's dish still tasted better than mine but it's a pretty good attempt on my part and I will definitely make it again :-) Here is my version of it:
POTATO SALAD WITH BACON & EGG
Ingredients:
1. 500g of potatoes
2. 220ml of Mayonaise (it was the amount in the bottle I bought)
3. 3 eggs
4. Bacon (or bacon bits like I got)
5. 1 tablespoon Mustard
6. Salt
7. Pepper
(Beatrice's sister had green capsicum in her salad, but I hate greens and I don't really like capsicum so I omitted it!)
1. Boil your eggs in water for around 10 mins to hard boil them.
2. Wash your potatoes.
3. Peel and dice your potatoes into cubes (I didn't have a skin peeler on hand, so I had to slowly peel of their skins using a knife. The first potato was peeled really badly but by the time I got to the fifth potato, I had the skills of a master :D)
4. Boil your potatoes in water, with a pinch of salt for around 30-40 min, depending on how soft you'd like your potatoes to be. (Raw potatoes and potatoes in the midst of cooking smells horrible in my opinion)
5. Fry your bacon and take in the lovely bacon aroma! (I got bacon bits because even if I got bacon strips, I was going to cut them into pieces anyway and also, bacon bits were leaner! They don't really look like bacon though, I don't know why - but trust me, they taste exactly like the real thing - they are in fact, the real thing anyway.)
6. Place your fried bacon bits onto paper napkins to absorb excess oil.
7. By now, your boiled eggs should have cooled down, so peel those shells off them!
8. Separate the yolks from the whites and chop the whites into little pieces.
9. It is mayo and mustard time! (Haha I love sauces when they are newly opened - just look at the little tip of mayo it is so cute and pointy and smooth)
10. Combine your mayonaise and mustard together with a pinch of salt and a dash of pepper, up to your own taste preference.
11. Mix well. (ahh so smooth)
12. Add the yolks into your sauce mixture and mash them in well.
13. Proceed to add your potatoes.
14. Finally, add your egg whites, and mix well!
15. Finish off with the bacon bits on top!
And there you have it! :') Potato salad with egg and bacon - I am so proud of myself and I'm very happy with how it turned out. Although a word of caution - do not use more than one tablespoon of mustard; I put in a bit more because I thought it would be good but it was a little too overpowering and made the salad a bit too tangy.
